Saffron (Crocus sativus) is a semi-tropical plant that grows in places with mild winters and hot and dry summers. Iran is the largest producer of saffron in the world and more than 90% of the world’s saffron is produced in Iran. On the other hand, saffron, as the most expensive spice in the world, has caused some profiteers to obtain benefits by preparing fake saffron and supplying it to the market. The main frauds used in saffron include dyeing with natural or synthetic dyes, increasing artificial colors, adding some materials that are similar in appearance to saffron stigmas, such as safflower, corn tassel, and turmeric root, so detecting fraud Saffron is not possible for people.
